Detox Soup

Ingredients
1 red bell pepper, sliced
1 zucchini, sliced
1 package of cherry tomatoes, whole
1 carrot, sliced
1 celery stick, sliced
1 heirloom tomato, chopped
2 bunches of garlic, tops sliced
1 can of fire-roasted corn
2 tablespoons of olive oil
Seasonings - Salt, Italian Seasoning, Garlic Powder, Onion Powder, Oregano, Cumin (optional)
2 cups of coconut milk
Instructions
Preheat oven to 450 degrees.
Combine all ingredients, except the coconut milk and seasonings, in a cast iron skillet or oven-safe dish.
Place cast iron skillet into the oven for 30 minutes.
When the food is done, remove the garlic from the peel by pushing it down from the stem.
Dump all of the ingredients into a blender.
Add coconut milk.
Blend for five minutes or until all ingredients are blended.
Pour into a bowl and enjoy!
Optional: Add your favorite toppings, such as sour cream, tortilla strips, fresh cilantro, and sliced jalapeños.
