Detox Soup

Ingredients

  • 1 red bell pepper, sliced

  • 1 zucchini, sliced

  • 1 package of cherry tomatoes, whole

  • 1 carrot, sliced

  • 1 celery stick, sliced

  • 1 heirloom tomato, chopped

  • 2 bunches of garlic, tops sliced

  • 1 can of fire-roasted corn

  • 2 tablespoons of olive oil

  • Seasonings - Salt, Italian Seasoning, Garlic Powder, Onion Powder, Oregano, Cumin (optional)

  • 2 cups of coconut milk

Instructions

  • Preheat oven to 450 degrees.

  • Combine all ingredients, except the coconut milk and seasonings, in a cast iron skillet or oven-safe dish.

  • Place cast iron skillet into the oven for 30 minutes.

  • When the food is done, remove the garlic from the peel by pushing it down from the stem.

  • Dump all of the ingredients into a blender.

  • Add coconut milk.

  • Blend for five minutes or until all ingredients are blended.

  • Pour into a bowl and enjoy!

  • Optional: Add your favorite toppings, such as sour cream, tortilla strips, fresh cilantro, and sliced jalapeños.
